Veggie help

So my roommate, L, and I are taking advantage of a program here at UBC, where, for a very reasonable fee, a box of organic and locally grown fruits and vegetables is delivered to the door of your residence every Friday afternoon. Last week's was delicious and we are anxiously awaiting this week's delivery, but we didn't quite eat up all the things we got last week and we're looking for some recipe help. We still have:

4 blue potatoes
1 white potato
6 onions
3 beets
1 bunch of Kale

If any of you have any recipes that would help us use this stuff up, please help us out. Especially with the onions, beets and kale. L would especially love you if the recipes are non-dairy as she has a severe allergy, but I certainly have no aversion to cheese.

Today's vegetable haul:

6 MORE potatoes, red this time (We currently have red, white and blue potatoes. I feel I should make something patriotic-- like three color potato salad or recreate the stars and stripes out of mashed potatoes)
4 apples
2 pears
3 tomatoes
3 carrots
Romaine Lettuce
2 cloves of garlic
Italian Parsley (A TON of it)
1 shallot
1 pumpkin

I've got most of these figured out, but suggestions on what to do with the shallot and parsley would be amazing. Also, any favorite pumpkin recipes would be great. I think I want to do a pie, but WHICH pie? Or maybe pumpkin scones or cupcakes or something??? I need suggestions!
